Author Yash Saxena Explores Kargil Food Culture and Identity at Event in Chennai

Author Yash Saxena took an audience through the unique culinary heritage, diversity, and identity of Kargil during an event held in Chennai on Friday evening as part of The Hindu Lit For Life Unplugged X Zhouyu Hosts.

Speaking in conversation with restaurateur Sandesh Reddy, the author of "Stories From A Kargili Kitchen" reflected on his four-year journey residing in Kargil and engaging with local communities to document their food histories beyond the region's geopolitical identity.

Saxena highlighted the ethnic and culinary variety present in the region despite its challenging geography. He noted that Kargil is home to seven different ethnicities across four religions. Despite limited ingredient diversity compared to other parts of India, each community utilizes available resources differently, leading to a distinct regional food culture.

Addressing common misconceptions that Kargil and Kashmiri cuisines are identical, Saxena explained that Kargili food is typically not heavy on oil or masalas. Foraging serves as an essential element of their food culture, meat is often considered a luxury, and local apricots hold a unique place in the diet. He also observed that the Public Distribution System, while standardizing food across the country, has impacted the indigenous cuisine of Ladakh.

Saxena also emphasized the importance of responsible engagement with the region through tourism and travel, noting that small gestures, attention, and appreciation help empower local communities.

The discussion was followed by a five-course Ladakhi meal prepared by Chef Nilza Wangmo of Alchi Kitchen. The curated dinner featured traditional ingredients brought directly from Ladakh for the occasion, including turtle beans, yak cheese, and juniper berries.
